Wow, this week has been a fantastically delicious one! I started off each morning with my recreated version of the breakfast sandwich I coined “The AUSTANWICH,” a delectable egg, cheese, and turkey or ham english muffin courtesy of Austin Evans;) They are wonderful and not too filling. I would definitely suggest giving them a try!

______________________________ And since I was able to do some grocery shopping to start off the week I had fun throwing healthy snacks together to get me through each day. A new discovery I’ve made recently is the organic gluten-free soup you see on the left. I found these at both Meijer  and Target in the soup isle and they come in numerous flavors. I was a little skeptical about trying them because I thought they may be lacking in flavor but was pleasantly surprised! If you are a soup lover then you’ve got to try these! I also found it handy to compile this “bag ‘o veggies” each day. I chopped up some carrots, celery, and red peppers and threw them in a bag with a dash of salt and enjoyed snacking on them throughout the afternoon. Greek yogurt with blueberries, strawberries, and honey served as my desert. Can I say YUM!!! Then when I arrived home I enjoyed a delicious dinner of Garden Vegetable soup (one of the above) and a slice of chicken bacon ranch pizza my parents had made. Now, I’m not gonna lie, today I did succumb to a slight chocolate craving around 4pm and enjoyed a few m&m’s to satisfy it!;) but over all, I’d say it was a pretty balanced, nutritious day!

I enjoyed trying a new cupcake recipe last night thanks to Chloe Coscarelli, a phenominal vegan chef! It was a little more time consuming than basic cupcakes but I think the results were well worth it! What do you think?

One thing I’d advise is not to beat the frosting mixture too long. The blend of ingredients will begin to get grainy and you’ll lose the smooth frosting texture… I had to throw out a whole batch of frosting because I blended too long on my first try! :/

I had so much fun with these!… It’s an form of artistic expression for me:)… if you can’t draw, bake!

These quick and easy stuffed pockets have been a staple food of mine for a few months now as they are only $1.50 for a pack of two at ALDI.

I know that they’re microwavable and technically that’s not the healthiest option but sometimes when your in a hurry and need something quick an item like this can be very helpful! HOWEVER…. BE FAIRLY WARNED! … the following is what I found in one of mine yesterday as I was cutting it open….

Needless to say, I will not be recommending these again anytime soon and I haven’t been able to get myself to open another one of the 3 boxes of these sitting in my freezer since!!!! …I know kids in Africa have eaten much worse than this but something’s just wrong about two hairs like these being frozen inside a prepackaged meal… how did they even get in there???? Yuck!

I’ve been juicing and blending crazy drinks occasionally for a couple years now but Angela’s great recipes make them that much more delicious!!! So spread the word and try it for yourself, most of my friends are hooked now too!:)
